Easy Penny Panko Meatballs

Ingredients:

  • 1/2 cup Penny Panko (Piedmont Pennies in crunchy form!)
  • 1/4 cup milk
  • 1 lb ground beef or ground turkey (don’t go too lean for max flavor)
  • 1/8 tsp salt
  • black pepper to taste

Directions:

1. Blend your Penny Panko in a blender or food processor for a finer consistency. In a medium bowl, mix the Panko crumbs with milk and let it sit for 10-15 minutes to soak up all that goodness.

2. Preheat your oven to 350°F.

3. Combine the ground beef or turkey, salt, and pepper with the Panko mixture. Mix until just combined. Shape the mixture into 36 meatballs (about 1 inch each) and arrange them in a single layer on a foil-covered, rimmed baking sheet.

4. Bake for 20 minutes or until fully cooked (internal temp of 160°F).
