Twice baked potatoes loaded with penny panko

Penny Panko Loaded Twice-Baked Potatoes

This recipe for cheesy double-baked potatoes brings you a twist on a classic comfort food that’s sure to have you coming back for seconds (and maybe thirds) – Penny Panko Loaded Twice-Baked Potatoes with Bacon and Cheddar Jack. This simple, yet elevated and decadent side dish makes a perfect addition to a stay-at-home date night menu.

These potatoes are crispy on the outside, creamy on the inside, and packed with flavors that will make your taste buds dance. Plus, we're using our signature Penny Panko instead of regular breadcrumbs, because why settle for ordinary when you can have extraordinary?

Ingredients You’ll Need:

  • 4 baking potatoes
  • 1 cup of Penny Panko, set ¼ cup aside to sprinkle on top
  • 1.5 cups shredded Colby or cheddar jack cheese, divided
  • 2 tablespoons bacon bits or crumbled bacon
  • 1/4 teaspoon smoked paprika
  • 3/4 cup sour cream
  • 4 Tablespoons butter, melted

How to Make Penny Panko Loaded Twice-Baked Potatoes:

  1. Bake the potatoes until soft. Helpful tip: Pierce the skin a few times with a fork before baking to let the steam escape. Once baked, slice the potatoes in half and let them cool slightly.
  1. Scoop out the filling – but not all of it! Leave a thin layer of potato inside to keep the skin from falling apart.
  1. Mash the filling and mix it with 1 cup of cheese, bacon, sour cream, smoked paprika, and your secret ingredient: Penny Panko.
  1. Stuff the potatoes back into their skins and sprinkle the tops with the remaining cheese and Penny Panko.
  1. Bake again at 375°F for 15-20 minutes, or until the tops are golden and crispy. The cheesy Penny Panko topping will make this the best twice-baked potato you've ever had.

And there you have it – a loaded twice-baked potato that’s crispy, creamy, cheesy, and oh-so-satisfying! Whether you’re cooking for friends or just treating yourself, these Penny Panko Loaded Twice-Baked Potatoes are a crowd-pleaser that’ll have everyone asking for your secret ingredient (spoiler alert: it’s the Penny Panko).
