Spicy Buffalo Cauliflower Bites

Perfect for game day, snack time, or a unique and delicious appetizer, these Spicy Buffalo Cauliflower Bites are perfect for whenever you're craving something bold and crispy. They’re also oven baked and made of… well, cauliflower– so they’re a great healthy alternative while still packing in that flavor. And using Penny Panko instead of regular breadcrumbs adds so much cheesy, rich flavor. Get ready to dig into these crunchy, spicy bites with a zesty Buffalo flavor!

Ingredients:

  • 1 head of cauliflower – chopped into nugget-sized florets
  • 1 tbsp cornstarch – helps the coating stick and stay crispy
  • 1 egg + 1 tbsp water – for an easy binding layer
  • 1 cup Penny Panko – for ultimate crunch and added flavor
  • Seasonings: ½ tsp onion powder, ½ tsp garlic powder, 1 tsp salt, ¼ tsp black pepper
  • Buffalo sauce – can't go wrong with Frank's Buffalo sauceAdjust from ½ cup to ¾ cup for your spice level
  • Optional: Blue cheese or ranch dressing for dipping

Instructions:

  1. Preheat & Prep: Get the oven heated to 425°F and line a baking sheet with a cooling rack (or parchment paper if you’re without one). A light spritz of cooking spray on the rack helps keep your bites from sticking.
  2. Cauliflower Magic: Toss your cauliflower florets in cornstarch until they're all lightly coated. This step keeps things crispy!
  3. Dip & Dredge: Whisk together the egg and water in one bowl. In another, combine your panko with onion powder, garlic powder, salt, and pepper. Now, dip each cornstarch-coated cauliflower piece in the egg, let excess drip off, and then roll in the panko mix until covered in crispy goodness.
  4. Bake to Golden Goodness: Spread the coated cauliflower on the baking sheet and bake for 18-23 minutes or until they're golden and tender.
  5. Buffalo Drizzle: Once baked, gently toss the bites in Buffalo sauce for a saucy, spicy coating. Want them extra crispy? Skip the toss and serve with the sauce for dipping instead!
  6. Serve & Enjoy: Plate it up with a side of blue cheese or ranch dressing and celery sticks.

These are also air-friable! Preheat your air fryer to 400°F and bake for 15-18 minutes or until golden.
