Ingredients:
- 1 medium zucchini, thinly sliced (you’ll get about 30-50 slices, depending on size)
- 1 tablespoon olive oil
- 1/2 cup Penny Panko
- 1/4 cup parmesan cheese (optional—feel free to sub more breadcrumbs if not using)
- 1 egg
- 2 tablespoons water
- 1/2 cup all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions:
- Preheat your oven to 400°F. Lightly grease a sheet pan with olive oil or line it with parchment paper. Set aside and get ready for some crunchy goodness!
- Prep Your Bowls: In one bowl, mix the panko breadcrumbs and parmesan (if you’re using it). In another bowl, whisk together the egg and water. In a third bowl, combine the flour, paprika, garlic powder, salt, and black pepper.
- Coat the Zucchini: Dip each zucchini slice into the flour mixture, then the egg mixture, and finally into the panko-parmesan mixture, making sure each slice is fully coated. Place the coated zucchini slices in a single layer on the prepared baking sheet.

You can also air fry these! Here’s how:
- Preheat an air fryer to 350 degrees
- Place zucchini slices in a single layer in the air fryer basket, working in batches if necessary.
- Cook in the preheated air fryer for 10 minutes; flip each slice and cook 2 more minutes. Repeat with remaining zucchini slices.
