Ingredients:

  • 4 center-cut boneless pork chops (about 1-inch thick, trimmed of excess fat)
  • 1 teaspoon kosher salt (divided)
  • ⅓ cup flour
  • 1 ½ cups Penny Panko
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder (optional)
  • 1 teaspoon ground chili powder (optional)
  • ¼ teaspoon ground black pepper
  • 1 large egg

Instructions:

- Preheat your oven to 425°F and position the rack in the center. Line a rimmed baking sheet with parchment paper or foil, and place an oven-safe wire rack on top, coating it with nonstick spray.

- Pat the pork chops dry with a paper towel and season both sides with ½ teaspoon kosher salt.

- Set up your breading stations: in one shallow dish, place the flour. In another dish, beat the egg until smooth. In a third shallow dish, mix together the Penny Panko, Italian seasoning, garlic powder, chili powder, black pepper, and the remaining ½ teaspoon of salt.

- Dredge each pork chop in the flour, then dip it into the beaten egg, letting any excess drip off. Finally, press the pork chops into the Penny Panko mixture to coat evenly on all sides. Place the breaded pork chops on the prepared wire rack, and mist the tops with nonstick spray to help them get golden brown.

- Bake the pork chops for 15-22 minutes, depending on their thickness. They are done when they reach an internal temperature of 140°F on an instant-read thermometer. Let them rest on the wire rack for 5 minutes before serving to lock in the juices.
