Penny Panko Leftover Thanksgiving Balls
Share
As much as I appreciate leftovers from hosting Thanksgiving dinner, I do tend to get bored of reheating mashed-potatoes, casserole, and turkey for days on end. This year, I’ve found the perfect solution to the not-so-problematic problem of dealing with those delicious leftovers: Leftover Thanksgiving Balls! Making use of the best parts of any Thanksgiving meal, this recipe reinvents mashed potatoes, stuffing, and turkey into something irresistibly crispy and delicious. These savory little bites are stuffed with all your holiday favorites, then rolled in our signature Penny Panko for that extra crunch. They’re also highly customizable depending on what you may have in your kitchen– leftover or not.
Trust me, after you try these, you’ll look forward to leftovers just as much as the big meal!
Penny Panko Leftover Thanksgiving Balls
Ingredients You’ll Need:
- 3 cups mashed potatoes (because who doesn’t have those left over?)
- 1 1/2 cups cooked stuffing
- 3 eggs
- 1/4 cup diced green onion
- 1 cup sharp cheddar cheese, grated
- 2 cups cooked turkey, chopped (yum!)
- 1 teaspoon black pepper
- 1/4 teaspoon red pepper (for a little kick)
- 1 teaspoon garlic powder
- 1 cup Penny Panko
- Vegetable oil (for frying up these golden nuggets of joy)
How to Make Penny Panko Leftover Thanksgiving Balls:
- In a big bowl, toss in your leftover mashed potatoes, stuffing, eggs, green onion, cheese, turkey, and seasonings. Get in there with your hands and mix it up until everything is combined.
- Grab your cookie scooper (or just eyeball it) and roll that mix into bite-sized balls. Next, pour your Penny Panko into a small bowl and coat each ball generously. This is where the magic happens — the Penny Panko gives these bites that signature crispy crunch!
- Heat up your vegetable oil to 350°F in a deep fryer or a heavy skillet. Fry your balls for 5-7 minutes, turning occasionally, until they’re golden brown and crispy. Remove with a mesh spoon and place them on a paper towel-lined plate to drain any excess oil.
- Serve them up while they’re still warm and watch them disappear! Trust me, these are the ultimate way to reinvent your Thanksgiving leftovers.
And there you have it! These Penny Panko Leftover Thanksgiving Balls are a fun, tasty way to enjoy Thanksgiving leftovers. Whether you’re hosting friends for a post-holiday get-together or just snacking solo, these crispy, cheesy, turkey-filled bites will be the star of the show.
