Momma Jordan's Baked Mac N' Cheese

Total Time: 35 min (prep 10 min, bake 25 min)
2 tbsp margarine
1/4 cup unsifted flour
1 tsp salt
1/2 tsp dry mustard
1/4 tsp pepper
2 1/2 cups milk
2 cups grated cheddar cheese
8 oz elbow macaroni, cooked 6 minutes, drained
1/4 cup Piedmont Pennies' crumbs
In a 2 quart saucepan, melt margarine over low heat. 
Stir in flour, salt, mustard, and pepper until smooth. 
Remove from heat. Gradually stir in milk until smooth. 
Stirring constantly, cook over medium heat for about 10 minutes or until thickened. 
Remove from heat. Stir in 1 1/2 cups of the cheese until melted. 
Pour macaroni into a greased 2-qt casserole. Pour cheese mixture over macaroni; mix well. 
Mix remaining cheese and Piedmont Penny crumbs; sprinkle over top of casserole. 
Bake at 375 for 25 minutes or until the topping is lightly browned. Makes 6 servings. 

Momma Jordan's Taco Soup

Total time: 1 hr 10 min (prep 10 min, simmer 60 min)
2 lb ground beef (or ground turkey), browned
1 white onion, chopped
3 cans chili beans (Mexican style)
1 can corn
1 can chopped tomatoes
1 can tomato sauce
1 cup water
1 can chopped green chilis
1 package taco seasoning mix
1 package ranch dressing mix
1 cup Piedmont Pennies
Optional: Sour cream or plain greek yogurt, scallions, shredded cheddar cheese
Mix all ingredients together in a large pot, bring to a boil. Simmer for one hour. Top with a dab of sour cream/plain greek yogurt and scallions. Serve with Piedmont Pennies for dipping or topping.
