Crunchy Celery Caesar Salad with Piedmont Penny Panko Cheesy Breadcrumbs

Indulge in the crunch and flavor of our signature Crunchy Celery Caesar Salad, elevated by the cheesy goodness of Piedmont Penny panko breadcrumbs.

This recipe combines the freshness of celery, the savory taste of Caesar dressing, and the crispy, cheesy bite of our premium panko breadcrumbs. Perfect for a quick lunch or dinner, this salad is a must-have for any food enthusiast.

 

About this recipe:

I met Rob (@LetBobbyCoachCook) at the 2025 Mother's Day Market at Pasta & Provisions on Park Rd, Charlotte. Rob works for DIVINA Market, and is a culinary genius on the side. We traded fig jam for Penny Panko cheesy breadcrumbs, and the rest is history!

Ingredients: (Serves 2)

  1. 8 pieces of celery
  2. Caesar Dressing (or use store-bought...)
    1. 2 egg yolks
    2. 3 anchovies
    3. 1 tbsp olive oil from
    4. 1 tbsp Dijon mustard
    5. Juice of half a lemon
  3. 1 cup Penny Panko cheesy breadcrumbs --> Buy here
  4. 1/2 cup Grated Parmesan cheese
  5. Chive blossoms (optional)
  6. Grated Black pepper

 

^^I used crumbs from my Jalapeno Pimento Cheese Pennies! Loved the hint of spice.

 

Instructions:

  1. Wash celery and pat dry
  2. Cut off 1/4 inch ends off celery, discard
  3. Cut celery into 4 inch sections
  4. Julienne cut the sections (Watch this Food Network Video: How to julienne cut)
  5. Place julienned celery pieces into an ice bath (bowl of water and ice)
  6. Make Caesar dressing by combining the ingredients above in a blender for 1-2 minutes until smooth (or use store-bought, I won't judge, I go for Cardini's or Aldi's brand, sue me).
  7. In a small bowl (my favorite bowl is the breakfast bowl by Haand Pottery in Burlington, NC, my hometown!) with a small spoon, mix the dressing with the Penny Panko Cheesy Breadcrumbs until combined
  8. Drain the celery and place the celery in a medium serving bowl
  9. Pour the dressing/panko mixture onto the celery, toss to coat
  10. Top with freshly grated parmesan cheese, chive blossoms, and grated black pepper (to taste)

 

I made this for friends and it stayed crunchy despite a 30 minute commute and wine time before eating :) We had a good time... Check out behind-the-scenes of the girls night.
