Crunchy Little Gem Salad with Yogurt Ranch and Penny Panko
Looking for a salad that’s all about crunch and fresh, savory flavors? This Little Gem salad with homemade yogurt ranch and crunchy Penny Panko breadcrumbs is light, full of texture, and super satisfying!
Ingredients
For the Salad
- 3 to 4 Little Gem lettuce heads, washed, leaves torn (about 1.5 lbs)
- Shredded Parmesan, for serving
- 3/4 cup Penny Panko
- Salt and pepper, to taste
- Sunflower seeds, if desired
For the Yogurt Ranch
- ¼ cup Greek yogurt
- ¼ cup mayo
- 1 garlic clove, minced
- 2 tablespoons fresh dill, minced
- 2 tablespoons fresh parsley, minced
- Juice of 1 lemon
- ¼ cup extra-virgin olive oil
- 1 tablespoon water, to thin out if needed
- Salt and pepper, to taste
Instructions

Prep the Lettuce
Wash the Little Gem leaves, pat dry, and set aside. -
Whisk Up the Yogurt Ranch
In a bowl, combine the yogurt, mayo, minced garlic, dill, parsley, lemon juice, salt, pepper, and olive oil. Whisk until smooth and creamy, adding a little water if you prefer it thinner. -
Assemble the Salad
In a large salad bowl, toss the lettuce with the yogurt ranch. Add the Penny Panko, a sprinkle of shredded Parmesan, sunflower seeds if desired, and fresh black pepper. For extra crunch, finish with a final dusting of Penny Panko.
