Crispy Penny Panko Chicken Sliders

Piedmont Pennies was recently featured on the VeryVera show, where Vera Stewart made these delicious chicken sliders using Penny Panko! Season 13 Episode 2, "Sliding into Home Plate", features the following recipe (starts around 12:00), which you can visit here to follow along as Vera makes these scrumptious sliders as well as a homemade honey mustard sauce. Ingredients

Chicken

  • 2 1/2 lb chicken breast
  • 2 1/2 cup Penny Panko Cheesy Breadcrumbs
  • 1/4 cup mayonnaise, or more if needed for coating
  • Honey mustard (recipe below)
  • Slider buns of choice

Honey Mustard

  • 1/2 cup mayonnaise
  • 1 tbsp. Dijon mustard
  • 1 tbsp. yellow mustard
  • 2 tbsp. honey
  • 1 tsp. apple cider vinegar
  • 1/8 tsp. kosher salt
  • 1/8 tsp. freshly ground black pepper
  • 4 dashes hot sauce (Vera recommends Texas Pete®)

Instructions

  1. Preheat the oven to 350° F.
  2. Pat the chicken dry and cut the chicken into 2” x 3-4” strips.
  3. Place the breadcrumbs in a small shallow dish.
  4. Place the mayonnaise in a small bowl and use it to coat the chicken.
  5. Dip the mayonnaise-coated chicken into the panko breadcrumbs to coat.
  6. Place the prepared chicken on a foil-lined baking sheet and place in the oven.
  7. Bake for 10 minutes, checking to make sure the internal temperature for each is 165° F.
  8. While the chicken is baking, prepare the honey mustard sauce. Combine all honey mustard ingredients in a small mixing bowl. Stir well to combine.
  9. Add honey mustard to your favorite bun and place a piece of chicken on each.
  10. Store any leftover honey mustard sauce in an airtight container in the refrigerator.

No crispy chicken slider is complete without a fresh and creamy coleslaw. Also featured on this segment of the VeryVera show, here’s a quick and easy recipe that’ll add just the right crunch and tang.

VeryVera’s Homemade Slaw

  • 1 cup mayonnaise (She recommends Hellman’s!)
  • 1/4 cup white wine vinegar, or apple cider vinegar
  • 1/4 cup granulated sugar
  • 1 pkg (16 oz) slaw mix
  • 1/2 cup apple, shredded
  • 1/2 tsp. black pepper

In a large mixing bowl, stir together the mayonnaise, vinegar and sugar. Stir in the slaw mix and shredded apple until combined. Add black pepper, to taste.
